We love the summer, even when the weather isn’t totally playing ball. Spring brings shoots of hope in the form of asparagus, purple sprouting and Jersey Royals, but it’s around now that nature really unleashes its bounty. It’s our favourite time of year for British produce and we’ve made the most of it by dotting the menu with tomatoes, samphire, courgettes, fennel, aubergines, peas and the like.
People don’t usually think of seafood as seasonal. Go to a fish and chip shop and you’ll see cod and haddock all year round, but there are variations throughout the year. Our favourite at the moment is plump summer plaice sustainably caught (of course) off the South Coast. Alongside it we’ve got Suffolk samphire, fennel and lemon. Simple, healthy, delicious.
There’s also another unlikely seasonal hero: lamb. Although synonymous with spring, it’s not actually at its best until the summer. We’ve paired it with new season borlotti beans and swiss chard from a small farm in Kent. Perfect summer fare.
